Why not just ask for text on a plain background?

Floating type has no physical constraints to hold it together, so strokes drift and characters double. Text on a painted sign, an embossed cover or a printed page inherits the object's geometry and comes out cleaner.

How long can the text be?

Two or three short words is the reliable range. Beyond that, expect to check every character, and expect to regenerate. Long copy belongs in a design tool, set over a generated background.

Can I use a specific brand typeface?

Not reliably, and reproducing a licensed typeface is a rights question of its own. Describe the letterform character instead, then reset the final artwork in the real font.
